Cheddar Cheese Puffs

The French call these cheese puffs Gougeres and I was introduced to them by a French neighbor of mine, who once served them at our book-club meeting.  I got this recipe from her years ago and since then have frequently served these as appetizers for a dinner party.

Ingredients:

1.    One cup of unbleached all-purpose flour
2.    One teaspoon of dried Thyme.
3.    ¼ teaspoon of baking soda.
4.    4 eggs for baking and one for egg wash.
5.    One cup of milk
6.    One stick of unsalted butter.
7.    One teaspoon of salt
8.    1/2 teaspoon of pepper.
9.    ½ cup sharp white cheddar cheese
10.    ¼ cup of grated parmesan cheese

Directions:

1.    Heat the oven at 425 degree Fahrenheit.


2.    In a large saucepan, start heating the cup of milk, stick of butter, salt, pepper, thyme and baking soda.


3.    When it comes to a boil, pour in the cup of flour and stir thoroughly for 2-3 minutes.  You may need to stir rigorously to incorporate all the flour and it looks like thick paste.


4.    In a food processor (using the plastic blade), add the flour mixture, the grated cheddar cheese and the parmesan cheese and then the four eggs one by one and pulse the mixture till it looks like a thick batter.


5.    On a nonstick baking sheet (silicone ones are best), spoon the batter into small mounds about 1-2 inches apart.
6.    Brush the top of these batter mounds with the egg-wash (to make egg wash, whisk the egg with a teaspoon of batter).
7.    Place this baking sheet in the oven and bake for 20 minutes or until golden brown.
8.    Serve while the puffs are still hot!
